A Simple Summer Salad for Baby

Following our post about dill, we received a message this morning from Marianne in New York, US.

She told us:

My husband is of Slavic descent and I’ve used many of his family’s traditional recipes to cook for my own children. I thought your readers might like to try this simple salad recipe that uses dill, which my baby enjoyed this summer when he started finger foods.

It’s very simple – all you do is take a small carrot, a small wedge of pumpkin and a piece of cucumber (about the same size as the carrot). Peel them, then cut everything into dice.

Steam the carrot and pumpkin until tender (but not mushy), then cool.

Mix the cooked vegetables with the cucumber, then stir in enough plain yogurt to coat all the cubes.

Finally, mix in some finely chopped, fresh dill – the amount you use depends on your baby’s tastes, so you might want to start with just a little.

Chill for at least an hour, then serve. It’s healthy, nutritious and SO easy!

A homemade baby food recipe sent in by one of our readers, combining diced fresh veggies with natural yogurt and dill.

Ingredients

  • 1 small carrot
  • 1 small piece of pumpkin
  • 1 small piece of cucumber
  • 1 tablespoon of natural yogurt
  • 1 teaspoon chopped, fresh dill

Instructions

  1. Peel the veggies if required, then chop everything into dice.
  2. Steam the carrot and pumpkin until tender (but not mushy), then cool.
