Baby’s Creamy Broccoli Soup Recipe

If your baby is not particularly enthused by the site of broccoli on his plate, then this delicious soup may be a great way to get this valuable veggie into his diet!
Broccoli is packed with vitamins and anti-oxidants and is a food that we should all consume regularly throughout our lives – so it’s a good idea to get your little one enjoying its benefits as early as possible.
Broccoli may cause gas (or wind) in some babies and some parents choose to wait until at least 8 months of age before introducing it. That being said, we introduced this soup (in its thicker form) to our little ones from 7 months of age and gas wasn’t an issue at all… in fact, they loved this recipe and still do!
For this creamy broccoli soup recipe for baby you will need…
1 tbsp butter
2 fl oz (1/4 cup) light cream or soy milk (optional)
1 small onion, chopped
*1 -3 medium potatoes
24 fl oz (3 cups) low sodium or homemade chicken stock
1 bunch of broccoli florets (about 1 1/2 cups), chopped roughly
pinch freshly ground black pepper
pinch nutmeg
*For a standard soup consistency, just use one potato. But to create a thicker soup (closer to a puree), then use all three!
Melt the butter in a large saucepan and saute the chopped onion until tender.
Stir in the chopped potato until covered with the butter.
Pour in the stock and bring the mixture to a simmer, then stir in the broccoli.
Simmer the entire mixture until both the potato and broccoli are tender.
Transfer to a food processor and blend until smooth.
Return to the saucepan and add the pepper, nutmeg and cream or soy milk (not essential, but certainly adds to the creaminess and luxuriousness of the soup).
Warm gently – but do not boil… then cool to a safe temperature and serve.
Do try some of this soup yourself… for such few ingredients and ease of preparation it really has quite a superb flavour!
