Baked Vegetable Trio — A Winter Warmer For Baby

If you’re feeling the chill in your corner of the world, then we have a lovely, warming baby food recipe for you today that can do double duty as a side dish for the whole family.

This recipe produces enough for everyone to share. But it also freezes well, if you want to set aside portions for future use.

Suitable from 6 months onwards (once your baby has been introduced to all the ingredients separately), this dish is easy to eat and the veggies become lovely and soft.

You can chop them for your baby (as shown), or puree them if you prefer, using the milk that remains in the dish when the vegetables are cooked.

To Make This Baked Vegetable Trio You Will Need

1 small garlic clove, crushed (optional)
1 tbsp olive oil
2 medium potatoes, peeled and sliced (about 1/8-inch thick)
around 8 oz (1 cup) swede/rutabaga, peeled, halved then sliced (about 1/8-inch thick)
1 sweet potato, peeled and sliced (about 1/8-inch thick)
1 tablespoon unsalted butter
pinch freshly ground black pepper (optional)
10 fl oz (1 1/4 cups) milk
pinch ground nutmeg
1 slice dry whole-wheat bread
2 tbsp grated Cheddar

Preheat the oven to 425 F (220 deg C).

Lightly grease a large, shallow baking dish with olive oil.

Using half of each type of vegetable, put in a layer of potato, a layer of swede and a layer of sweet potato.

Melt the butter, mix with the crushed garlic, then pour over the vegetables.

Add the black pepper, then layer in the remaining vegetables.

Heat the milk with the nutmeg, then pour evenly over the vegetables (the vegetables should be almost completely covered).

Make bread crumbs by putting the bread in a food processor – this works best if the bread is a little stale. Pour in a little olive oil as you process the bread.

Mix the bread crumbs with the cheese, then sprinkle over the veggies.

Cover with foil and bake for 1 hour. Then remove the foil and bake for a further half an hour, or until all the veggies are tender.

Stand for a few minutes before serving, which allows the mixture to thicken.

TIP: You can make this a more substantial meal for your baby by adding cooked, diced meat to the vegetable layers (chicken works well!).
