Easy Homemade Fish Fingers

Today we share with you a recipe for homemade fish fingers that’s so quick and easy you’ll never look at the store-bought variety again!
Fish is a wonderful food for the whole family - but many commercially made fish fingers are lacking in nutritional value - not to mention flavour! This recipe does NOT involve mincing the fish - meaning the end result has a wonderful flaky texture - and the blend of seasonings shows just how unnecessary salt is in producing tasty dishes!
These homemade fish fingers make an ideal finger food for those for babies who are feeding themselves.
Here’s what you’ll need…
2 egg yolks
1 tablespoon water
3oz (3/4 cup) fresh whole wheat bread crumbs
pinch dried oregano
pinch dried parsley
pinch dried thyme
pinch freshly ground black pepper
1 tbsp Parmesan cheese (grated)
1 lb (2 cups) skinless white fish (or you can even try salmon for variety!)
3 tbsp olive oil
Take two bowls. In one, beat the egg yolks with the water. In the other, mix the bread crumbs with the seasonings and Parmesan cheese.
Cut the fish into 2 inch ‘fingers’.
Dip each finger into the egg mixture, then coat them thoroughly in the bread crumb mixture.
Heat the olive oil over a medium heat in a frying pan/skillet and cook the fingers for 3-4 minutes.
Using a spatula, carefully turn the fish fingers over and cook for another 3 minutes.
