Hearty Vegetable Soup With Oats to Warm Your Baby

Then why not try this lovely and nutritious vegetable soup recipe for your baby that will warm him from the inside out!

To make Baby’s Hearty Vegetable Soup with Oats you will need…

8 fl oz (1 cup) low sodium or homemade vegetable stock
1 small carrot, peeled (if not organic) and sliced
small handful of green beans, topped, tailed and chopped
1/4 onion, peeled and chopped
1/2 parsnip, peeled and sliced
small garlic clove, crushed (optional)
pinch each of basil, marjoram and parsley (or whatever herbs your baby enjoys)
little olive oil
1 tablespoon rolled oats

Heat the olive oil and saute the onion with the garlic (if using) until tender but not browned.

Pour the stock into a pot and add the onion/garlic mixture and all the other ingredients (except for the oats and herbs).

Bring to the boil, then lower the heat and simmer for 10 mins.

Sprinkle in the oats and herbs, stir, and simmer for another 10 mins, until the oats and all the veggies are tender.

Transfer half the mixture to a food processor and blend until smooth.

Stir the processed mixture back into the pot, then cool to a safe temperature and serve!

You can vary the amount of oats you use to thicken or thin the soup as required – and you can choose to puree the whole batch instead of just half if your baby doesn’t enjoy lumps.

Very simple and very tasty!
