If your little one has a birthday coming up – or if you’d simply like to treat him to a piece of cake that’s deliciously moist and contains the goodness of whole wheat, oats, bananas and blueberries – then this is a super recipe to try.  It certainly got a big thumbs up from all the taste testers in our house!

Our recipe includes the instructions to make an optional cream cheese frosting that adds that special touch so important for baby’s first birthday cake. But this recipe is totally tasty with or without it, as your baby and all his party guests will agree!

After having used this lovely recipe to bake a cake for my daughter's 1st birthday 1.5 years ago, I tried it again recently but with a couple of modifications. Firstly, I made mini muffins instead of a full-size cake, and secondly, I wanted them even healthier so I used puréed apricots (dried apricots soaked overnight, then whizzed in a blender) in place of concentrated apple juice. Also, as this was a trial run, I only used a sixth of each ingredient except for the eggs, where I used 1 small egg. And I used 35 g of the apricot puree. This made 10 mini muffins, which I baked at 210 degrees Celsius for 10 mins, and they turned out perfect! Only mildly sweet but that's exactly what I wanted as I want my daughter to learn that cakes don't have to be as overly sweet as the store bought ones typically are to taste good. I love them, she loves them - an absolute success :)!

Why does the apple juice have to be frozen and thawed? Can I just use it out the carton? Thanks!

 @sallysparkles Apple juice concentrate usually comes frozen (please note that it's the concentrate you need, rather than regular apple juice). It needs to be thawed before use. Hope this helps :)

I tried this recipe twice as trial runs for my baby's first birthday cake. I saw the picture and comment that Cecilia left saying she reduced the recipe to 1/4 the size successfully. This is what I did and it did not work at all. I am so upset! It tasted great but was mushy mushy, even after baking for an hour (it was only a 6in pan)

 @jampcat9 That's a shame - we've never actually tried Cecilia's suggestion, but it came out wonderfully using the original recipe - have you tried it that way?
