In our house, garlic is pretty much a staple ingredient! Our little ones have loved it from even BEFORE they were born (I ate loads of garlic-laced food whilst pregnant!) and then during nursing, when they received their daily dose via their milk.
So no wonder they’ve all loved it in their solid foods too, right from their very first purees which often contained a little garlic for added pizazz, all the way up to finger foods.
And a particular favourite – among the grown-ups as well as the tots – are these gorgeously garlicky stuffed mushrooms!
Mushrooms are not your typical baby food, granted. There’s a common misconception that they’re not very nutritious, whereas they actually contain a variety of vitamins, minerals and useful compounds called beta-glutans that help support the immune system (you can learn more about this on our Mushrooms Baby Food page).
And we love them as a finger food because they’re delightfully soft and squidgy – and they really do have a fantastic flavour!
This recipe is ideal from around 10 months onwards – we hope your little one (and the rest of the family) all enjoy it.
To Make Baby’s Stuffed Mushrooms You Will Need…
a dozen mushrooms (they’re easier to stuff if they’re not too small)
3 to 6 garlic cloves, crushed*
1 large shallot, finely chopped
1/2 cup (around 2 oz) fresh whole wheat bread crumbs (here’s how to make them)
2 tbsp olive oil
1 tbsp fresh parsley, chopped
1/2 cup (2 oz) grated Cheddar cheese
*It’s up to you how much garlic you use – we use the full 6 cloves, but you may want to start with less and increase the amount if your baby seems to enjoy it.
Preheat the oven to 350 deg F (170 deg C).
Heat 1 tbsp of the olive oil in a small pan and cooked the shallots and garlic until tender.
In a bowl, mix the bread crumbs with the parsley.
Stir the shallot/garlic mixture into the bread crumb mixture.
Clean the mushrooms, remove the stems and place them on a greased baking sheet. Drizzle them with the rest of the olive oil.
Spoon the bread crumb mixture into each cap, then top with the grated cheese.
Place in the oven and bake until the cheese is golden and melted.
Cool to a safe temperature and serve.
