Twice Baked Acorn Squash For Baby

Today we have a very nutritious baby food recipe for you using one of our favourite ingredients – acorn squash.
Rich in beta-carotene, potassium and fibre – and with a mildly sweet flavour – acorn squash makes a wonderful food for little ones. This recipe combines just a few simple ingredients with the squash, with truly delicious results!
This is a recipe that the whole family can enjoy and is ideal for babies from 6 months of age…
To Make Twice Baked Acorn Squash For Baby You Will Need…
1 acorn squash
2 heaped tablespoons natural, whole milk yogurt
pinch freshly ground black pepper (optional)
1 tablespoon fresh parsley, finely chopped
1 spring onion/scallion/green onion, finely chopped (optional)
Preheat oven to 400 deg F, 200 deg C.
Cut the squash in half and remove the seeds (you can toast these for a yummy snack for the grown ups, just like pumpkin seeds).
Place the squash, cut side up, in a baking pan.
Pour in water until it comes around 1/4 inch up the squash, then cover the pan with foil.
Bake for around 45 mins, until the squash is completely tender.
Remove from the oven and allow to cool to a safe handling temperature.
Scoop out the flesh of the squash, but leave a little in the shell or it will collapse!
Put the flesh of the squash in a bowl with the spring onion, parsley and yogurt.
Mash together thoroughly, then spoon the squash back into the shells.
Bake for another 30 mins at 400 deg F, then cool and serve!
