This is a very simple recipe to prepare and uses such a lovely combination of flavours!
The apple adds sweetness to the spinach, which will help tempt your baby if he’s not a huge fan of vegetables.
The potato, meanwhile, adds substance to the puree, making it a satisfying meal for your little one and creating a perfect, ‘spoonable’ texture.
Best of all, this little combo – ideal from around 10 months of age – is packed with nutrients!
We recommend using organic spinach in your baby food recipes, because it’s number 2 on the Environmental Working Group’s list of the ‘Dirty Dozen’. The Dirty Dozen is a list of the fruits and vegetables most likely to be high in pesticide residues.

To peel or not to peel?
You can leave the potato and apple in this recipe un-peeled if you prefer – after all, lots of the nutrients in produce are concentrated in – or just under – the skin. But there are some occasions where leaving the skin on is NOT a good idea.

To Make Baby’s Spinach, Apple and Potato Puree You Will Need…
1 small white potato, diced*
1/4 medium apple, cored and diced*
small handful of spinach leaves
* Peeled or unpeeled – see above
Place the diced potato into a small saucepan and just cover with water. Bring to a boil, then reduce the heat and simmer for 5 minutes.
Add the apple cubes and simmer for a further 5 minutes, or until both the apple and potato cubes are tender.
Add the spinach and simmer for a minute or 2 more, until the leaves have wilted.
Using a slotted spoon, transfer the veggies and apple to a blender. Blend until smooth, adding as much of the cooking water as necessary to achieve the texture you desire.
Variations
Although we have prepared this dish as a puree, you could make it into a ‘mash’ instead. Just puree the spinach and apple together, but mash the potato. Stir the puree into the mashed potato, and serve!
Another yummy variation is to add cheese! Just mash some freshly grated Cheddar into the cooked potato until melted, then mix with the remaining ingredients.
Or why not try replacing the water in the recipe with something else? Apple juice works well, or you could use homemade chicken stock, which gives a much richer flavour.
