We’d like to wish all of you who celebrate it a VERY happy Diwali this weekend!
What’s more, we even have a baby food recipe to help your little one celebrate the Festival of Lights along with you – courtesy of our visitor Asha, from India.
Asha told us how Diwali is often celebrated with the consumption of lots of sweet treats and she gave us this recipe for Gaajar Ka Halwa – a carrot pudding that she plans on serving to her little one.
The recipe includes sugar, but we gave it a try without the sugar and our little man simply lapped it up! (Our apologies, Asha – we know that’s not quite in keeping with the tradition of enjoying sweet foods, but we wanted to let everyone know that this is a tasty dish for baby even without the sugar!).
Asha told us that the original recipe, which she uses for the adults, also includes ground cashews and is topped with almonds, but she left those out as they might not be suitable for very young children.
To Make Asha’s Gajar Ka Halwa You Will Need…
3 medium carrots, peeled and grated
6 fl oz (3/4 cup) milk
5 tbsp ricotta cheese
2 cardamom pods
3 tbsp sugar (see note above)
2 tbsp plus 1 tsp unsalted butter
2 tbsp raisins
Melt the butter in a small frying pan/skillet and saute the carrots for several minutes.
Stir in the sugar (see note), cardamom and raisins and cook for a few more minutes.
Stir in the milk and bring to the boil.
Lower the heat and simmer for 15 mins, stirring frequently.
Add the ricotta cheese and cook for a further 5 minutes, stirring constantly, until thickened.
Cool and serve when just warm.
