A Dish for Diwali – Yummy Curry for Baby!

The time for Diwali celebrations is approaching – and we’re going to help baby celebrate right along with you, with this easy-to-prepare recipe for a Butternut Squash and Chicken Curry… yum!

This recipe is ideal for babies of at least 7 months of age who are already enjoying a wide variety of foods.

Baby curry recipe

For this curry recipe for baby you will need…

2 tsp oil
*1 tsp mild curry paste (see below for how to make your own)
1 chicken breast, boneless, skinless and cut into small pieces
6 oz (3/4 cup) butternut squash, peeled and diced
2 tbsp red lentils
4 fl oz (1/2 cup) low sodium or homemade chicken stock
8 fl oz (1 cup) coconut milk

*To make your own mild curry paste…

Put 1 oz crushed garlic, 1/2 inch fresh ginger (peeled), 1/4 small onion (chopped), a good pinch of turmeric, a good pinch of cinnamon and a good pinch of ground cumin into a food processor with a little oil. Process until blended.

Heat the oil in a pan and stir in your curry paste.

Cook for a minute, then add the butternut squash cubes, pieces of chicken and the lentils.

Stir well until coated with the paste, then add the chicken stock and coconut milk.

Raise the temperature and bring to the boil, then lower the heat and simmer for 18 to mins, until the chicken is cooked through and the vegetables and lentils are tender. The sauce will have thickened and the dish should be nice and creamy.

Mash well – or puree – and serve with rice or bread!
