If your baby is enjoying the aromatic delights of a nice curry, then he’s going to LOVE this healthy recipe that combines chicken and fruit flavours!
Serve this curry with rice, or with an Indian bread such as nan or roti… the only difficult thing about preparing this dish is not eating it all up before serving it to your little curry connoisseur!
For baby’s chicken and apple curry recipe you will need…
1 chicken breast, boneless and skinless, chopped
2 fl oz (1/4 cup) apple juice
pinch freshly ground black pepper (optional)
1/2 sweet apple, peeled, cored and diced
1/2 small onion, chopped
1 tbsp raisins
good pinch of curry powder
little pinch of sage
little pinch of thyme
little pinch of garlic powder
Place all ingredients in a small saucepan.
Bring to the boil, then immediately lower the heat and cover.
Simmer for 10 to 15 mins, until the chicken is cooked through and the apple is tender.
Serve chunky (pictured), or puree thoroughly, adding a little more apple juice if necessary.
