Baby’s Creamy Apricot Dessert

Today’s recipe uses dried apricots, which are wonderfully versatile and nutritious. They also tend to be more readily available than fresh apricots, which can be difficult to find in some parts of the world.

Dried apricots are high in beta-carotene (vitamin A) and fibre – making them a good choice if your baby is suffering from constipation but a food best avoided if he is experiencing a bout of diarrhea.

Apricots also contain B vitamins and vitamin C– and this recipe includes yogurt for a nice dose of calcium too!

We recommend using organic apricots in your baby food recipes if possible – but whenever buying apricots, check the label to ensure that they do not contain sulfur dioxide or sulfites. These are used as a preservative and are are responsible for the very ‘orangey’ colour of many dried apricots. However, they can trigger allergic reactions in sensitive individuals – therefore sulfured dried apricots are best avoided in your baby food recipes.

You will probably find that organic, unsulfured dried apricots look rather brown in comparison to the more vibrantly coloured sulfured apricots – however, they taste every bit as good and are far better for your little one!

For Baby’s Creamy Apricot Dessert You Will Need…

4oz (1/2 cup) organic dried apricots
4oz (1/2 cup) apple juice
4oz (1/2 cup) natural, whole milk yogurt (here’s a recipe to make your own)

1. Pour the apple juice into a small saucepan and add the apricots.
2. Bring to the boil, then lower the heat and cover.
3. Simmer gently for 10 mins (this will soften the apricots, making them easier to puree).
4. Remove from the heat and allow to cool.
5. Process in a food processor until smooth, then swirl the apricot with the yogurt.
6. Chill before serving and top with wheat germ for even MORE nutritional value!
