Today we have a recipe for you that’s very easy to prepare and which makes convenient, bite sized chicken treats that your baby can enjoy as a finger food.
We started making these for our youngest son once he was a year old, but your baby may be able to manage quite a bit earlier, as the unusual cooking method used to make them produces a unique, easy-to-eat texture.
With their touch of curry powder, plus celery and garlic, they’re quite sophisticated in terms of flavour and just perfect for the baby food connoisseur!
Although we serve these as a finger food, they would also be great in a simple tomato sauce and served with pasta! They freeze well, so you can simply make up a big batch and take out a few whenever you need them (we always freeze them after blending the ingredients, before cooking them)!
To Make Baby’s Tender Chicken Rissoles You Will Need…
1 chicken breast, boneless and skinless
1 tsp curry powder (omit if you’d prefer to keep the rissoles plain)
1 carrot, peeled and chopped
1 stick of celery, chopped
1 clove of garlic, chopped
1 egg
1/2 tsp dried thyme
Chop the chicken into small pieces.
Place the chicken along with all the other ingredients in a blender and process for two minutes, until thoroughly combined.
Bring a saucepan of water to a rapid boil.
Drop the chicken mixture (which will be fairly ‘loose’ and wet), one tablespoon at a time, into the boiling water and cook for 5 to 10 mins, until the chicken is cooked through.
Cool and serve, adding a plain yogurt dip if desired!
