Today we have a deliciously exotic baby food recipe for you using plantain.
Before you give it a try, check out this post from our blog last summer, which will give you a brief overview of plantain and tells you how best to use it at various stages of ripeness.
Today’s recipe uses green plantain and the results are mouthwatering, not only making a wonderful dish for baby but a tasty side dish for the grown ups, too! Its sweetness makes it an interesting accompaniment to a savoury meal, or a yummy dessert when served alone!
Due to its soy content, we recommend this recipe for babies from 8 months onwards (you can find out about infant soy allergy here).
For Baby’s Creamy and Aromatic Plantain Puree You Will Need…
1/2 green plantain, peeled and sliced thinly
1 small, ripe banana, peeled and sliced
8 fl oz (1 cup) water
6 fl oz (3/4 cup) soy milk
pinch ground cinnamon
pinch ground nutmeg
drop of vanilla extract
Place the sliced plantain and banana into a food processor and add the water. Blend until it resembles a puree.
Transfer the mixture to a saucepan and heat until bubbly.
Stir in the soy milk, cinnamon, nutmeg and vanilla, then as the mixture begins to bubble again, lower the heat.
Simmer gently for 15 mins, stirring often.
The mixture will have a fairly thick texture at the end of the cooking time and is now ready to serve!
