White potatoes can be rather boring as a food for baby, so it’s always nice to find new ways to jazz them up!
Today, then, we have a simple baby food recipe for you that was devised to turn the humble spud into something special!
This recipe would be ideal for babies from 6 months of age who have been introduced to all the ingredients separately beforehand.
To Make Creamy Cheesy Mashed Potato for Baby You Will Need…
2 small-medium potatoes, peeled and diced
around 2 to 4 fl oz (1/4 to 1/2 cup) low sodium or homemade chicken or vegetable stock
2 tbsp cream cheese
2 tbsp natural or homemade yogurt
1 tbsp Parmesan cheese, grated

Put the diced potatoes in a saucepan and just cover with the stock.
Bring to the boil, reduce the heat and simmer until tender (approximately 15 mins).
There shouldn’t be much stock left in the pan, so there’s no need to drain the potatoes – simply empty them into a mixing bowl and mash with the cream cheese.
Finally, stir in the Parmesan cheese, then the yogurt, and serve!
Much nicer than plain old mashed potato – and you can jazz things up further by adding some fresh, chopped herbs (chives would be wonderful!).
