I have a “homemade cheese” recipe for babies: it can be made from plain milk or formula. When the milk is boiling I add one or two teaspoons of lemon juice for 500 ml of milk (this is just over 2 cups) and wait until the cheese separates.Then I put it in a strainer.
It’s really tasty and I use it with fruits, homemade biscuits, zucchini souffle or polenta.

If you’ve never made your own cheese before, do give it a try – the texture is nice and soft (similar to cottage cheese) and great for babies. You might like to use this particular technique for older babies, as young babies sometimes react to lemon juice.
A great way to strain your homemade cheese is to line your colander with muslin or a piece of cheese cloth. Set the colander over a bowl – this will catch the liquid that separates from the whole milk, which is actually whey. Whey is nutritious and can be combined with stock when making soup, used to cook pasta, mixed with the milk in milk-based recipes, or added to smoothies. You can even drink it by itself, although most people like to add a little sweetener to make it palatable.
Once the cheese has drained, gather up the corners of the muslin and tie them, so that you have created a little ‘bag’. Hang the bag up for 2 hours – any remaining whey will drain out and your cheese will be ready! You can store your homemade cheese in the refrigerator for 2-3 days.

We have only used breast milk or cow's milk to make homemade cheese - so we'll pass this back to Laura, who (we think, judging from her message) has used formula to do so. Did you use powdered or liquid formula - is there one in particular that you'd recommend?
