Chicken… and fruit? It may sound yucky to you, but you might be surprised at just how well this recipe goes down with your baby!
For one thing, babies haven’t yet decided which types of food should ‘go’ together – so a sweet/savoury combination is perfectly acceptable.
Quite apart from that, however, is the fact that fruits (in this case, grapes) lend themselves very well to meat or poultry dishes. We love the subtle sweetness they provide… and for little ones? Well, it’s baby food heaven!
This recipe is ideal for babies from around 7 months of age.
Here’s what you’ll need
1 small skinless and boneless chicken breast, chopped
4-6 fl oz (1/2 to 3/4 cup) low sodium or homemade chicken stock
10 red grapes (seedless), peeled
1 medium carrot, peeled and diced
1 small white potato, peeled and diced
Put the chopped chicken into a small saucepan and pour in 1/2 cup of stock.
Bring to the boil, then lower the heat to a simmer.
Cook, covered, for 15 mins.
Add the carrot and potato cubes and re-cover. Continue to cook gently for a further 15 mins (adding a little extra stock if the mixture looks too dry), until the potato cubes are fork tender and the chicken is cooked throughout.
Transfer to a food processor and add the peeled grapes. Whiz together until smooth, adding a little more stock for a smoother texture if necessary.
And that’s it – you now have a complete no-fuss meal for your baby, all cooked in one pot (so there’s little to clean up afterwards!).
