This recipe is perfect if – like us – you’re in an area where getting hold of fresh fruit isn’t always easy! Instead, it uses both dried and canned fruit to provide a delicious sweetness and incredibly moist texture that your baby will love.

To Make Fun-tastic Fruit Cake You Will Need…
3/4 of a 15 oz can pineapple chunks in their own juice (chop if desired)
1 canned peach, chopped
4 fl oz (1/2 cup) water
8 oz (1 cup) raisins
8 oz (1 cup) dried cranberries
4 oz (1 cup) all purpose flour
2 oz (1/2 cup) whole wheat flour
1 1/2 tsp baking soda
1 1/4 tsp baking powder
1 tsp ground ginger
1 tsp ground cinnamon
2 eggs
Preheat the oven to 350 deg F.
Place the pineapple, peaches, water, raisins and dried cranberries into a large saucepan and bring to the boil.
Immediately lower the heat and simmer for a couple of minutes. Remove from the heat and set aside to cool.
In a separate bowl, mix the 2 kinds of flour with the baking soda, baking powder and spices.
Beat the eggs into the cooled fruit mixture then fold in the dry ingredients and mix thoroughly.
Turn the mixture into a greased 9″ x 9″ baking pan and place in the oven.
Cook for 40 to 50 mins until a knife inserted in the centre comes out clean.

Very good cake! I like when desserts are just sweet enough and this one is. It would be great with dried cherries too! My baby and I loved it, I'm going to cut the cake in small portions and freeze it to have it on hand for either breakfast, snack or dessert. Thanks for a great recipe!
