Gourmet Mashed Potato for Baby

None of our babies liked plain old mashed potato! They would gag and look most offended whenever we tried to include a little mashed potato in the feeding bowl… so we had to get creative!

Today’s recipe is for a truly yummy garlicky mashed potato that everyone in the family will really enjoy! Our little ones were tucking into garlic-based recipes from 6 months of age, but if you prefer to serve your baby’s meals a little plainer to begin with, then you can wait until later in his first year to introduce this recipe… or simply omit the garlic altogether!

Here’s what you’ll need to make magnificent mash…

1 small bulb of garlic
olive oil
1 lb baking potatoes, peeled and cut into chunks
1 1/2 tbsp butter
4oz (1/2 cup) cottage cheese
1 fl oz (1/8 cup) breast milk, formula or whole milk
little pinch of freshly ground black pepper

Preheat the oven to 375 deg F.
Cut cross-ways across the top of the garlic bulb (exposing the tops of the cloves inside).
Drizzle some olive oil over the exposed garlic, then wrap the whole bulb in foil and place in the oven.
Cook for one hour, then set aside to cool.
In the meantime, boil your potatoes as usual until fork tender.
Drain and place into a bowl with the butter, milk and the cottage cheese.
Squeeze as much of the garlic (now soft) into the potato as your baby will enjoy.
Mash everything together, adding the black pepper, then serve!

This recipe sounds really good on it's own, but being in a house full of cheese lovers, some other ideas to jazz up even this recipe would include adding a half a cup of shredded sharp cheddar cheese, or 1/4 cup of grated parmesan. Parmesan garlic potatoes are a favorite in my house :)

Also, reading through the potato recipes, I noticed that mashing and pureeing seemed to be the only two options (besides chopping of course). But one way that we make our mashed potatoes at home normally, even without a baby in the house, is whipped. When we make potatoes, we add butter and one whole egg to the cooked potatoes before whipping with a mixer. The egg can be omitted for babies who haven't had egg yet, but I would then suggest adding, cream or milk for that soft, smooth texture.
