Homemade Whole Wheat Flatbread

If you’ve always been a bit reluctant to try your hand at making any kind of bread for your little one, then today’s recipe would be a great one to get started with as it’s SO easy!

With just a few ingredients (including protein-rich cottage cheese) and very little effort, you’ll soon have 6 yummy flatbreads that you can use in any way you like.

We use them to create little pizzas, or cut them in strips and serve them with hummus, but our youngest son has always enjoyed them just as they are… they have the kind of texture that he can ‘gnaw’ on just a little.

These flatbreads are best for babies already comfortably biting and chewing – we do not recommend them for younger babies as they do not have a ‘melt in the mouth’ texture.

To Make Homemade Whole Wheat Flatbreads for Baby You Will Need…

1 cup whole wheat flour, plus a little extra for rolling out*
1 1/2 tsp baking powder
3/4 cup cottage cheese (look for a low-sodium variety)

We used granary flour in our recipe, hence the little ‘bits’ you see in the photo. If you don’t want this much texture, however, then stick to wheat flour.

Mix the flour with the baking powder.

Add half the cottage cheese and mix, either with a wooden spoon or your hands. Add the remaining cottage cheese and mix until fully incorporated (we find this easiest to do by hand!).

Wrap the dough in food-safe plastic and refrigerate for one hour.

Divide the dough into six balls on a floured surface, then sprinkle a little flour on to each ball.

Roll each out into a 6-inch circle.

Heat a griddle or non-stick frying pan, then add the first circle. Cook for a minute or two until it starts to rise, then turn it over and cook for a couple of minutes on the other side.

Remove from the pan and repeat with the remaining portions of dough.

Serve as required!

TIPS: If you don’t use all of these in one go, you can wrap the rest in food-safe plastic wrap and freeze for up to one month.
For more flavour, add your baby’s favourite dried or fresh herbs to the flour before you mix it. A big pinch of dried thyme is good – so are a couple of tablespoons of fresh, chopped parsley.
