Semolina With Sweet Potato and Dates

We received a message this morning from Poonam in Hyderabad, India. She has devised a unique homemade baby food recipe that revived her little one’s interest in sweet potatoes and thought that other visitors to our website might like to give it a try too!

Semolina with sweet potato and dates is one more recipe for DD. She stopped having sweet potato, so I thought maybe I should just mix it in some yummy porridge!

You need:
1/2 diced sweet potato
3 dates
1 cup water
2 tbsp semolina (roasted)
3 tbsp milk
1/2 tsp ghee

I usually dry roast a batch of semolina and use it as and when required. This is how you do it:
In a saucepan, dry roast semolina till you get a nice aroma and the color changes just a little, this would take a few minutes. Use the amount required, cool and store the rest in an airtight box in the refrigerator.

Now, for the recipe…

In a pressure pan, cook the dates and sweet potato together.
Mash/puree.
Now heat the ghee, add the semolina and half the puree, add milk and an additional cup of water.
Cook till lumpy and serve.
You can freeze the remaining puree for when you want to prepare this again for your baby.
