Tammy from Virginia in the US sent us a simple homemade baby food recipe yesterday that we thought we’d share with you today!
Tammy’s son Cody LOVES sweet potato – in fact, he loves it so much that he’s starting to refuse anything less sweet! We were discussing this with Tammy last week and suggested that she served different foods WITH the sweet potato (so he can still detect that flavour he knows and loves!), but that she reduces the amount of sweet potato every time until he’s willing to eat other veggies by themselves.
So this is what Tammy has been doing – and it’s working very well, as she’s been able to get him to eat lots of things he was refusing before. One of those things is zucchini (or courgettes as you may know them) – and Tammy put together this simple recipe that Cody enjoyed so much she thought other parents might like to give it a try.
To Make Baby’s Zucchini and Chicken Puree with Sweet Potato You Will Need…
1 small zucchini (courgette)
1/2 chicken breast (skinless and boneless)
6 fl oz (3/4 cup) low sodium chicken stock or water
1/2 small, cooked sweet potato
pinch marjoram
Cut the chicken breast into small pieces and place in a small saucepan. Pour in the stock or water.
Bring to the boil, then lower the heat and simmer for around 10 mins until the chicken is completely cooked through.
Meanwhile, cut off both ends of the zucchini and slice (no need to peel).
When the chicken is almost done, add the marjoram and zucchini slices to the pot. Continue to cook for a couple of minutes until the zucchini is just tender.
Place the chicken and zucchini mixture into a food processor and blend until smooth. Add some of the stock or water you cooked it in to get the right texture.
Finally, mix the pureed chicken/zucchini with mashed, cooked sweet potato (I just mash it roughly to give a little bit of texture). You can add raw sweet potato dice to the pot with the chicken and cook it that way, but I always cook sweet potatoes in their skins a few at a time, then use the cooked sweet potatoes in lots of different recipes.
