Smooth ‘N Silky Zucchini, Potato and Apple Puree

Today’s recipe is just perfect for baby food beginners – a smooth and silky combination of zucchini (courgette), potato and sweet apple.

This terrific trio provides your baby with…

  • beta-carotene (from the zucchini)
  • vitamin C (from the potato)
  • fibre (from the apples

…plus LOTS more valuable vitamins and minerals.

But this is a super combination in other ways too!

The sweetness of the apple gives the dish an appealing flavour that even the staunchest veggie-avoiders should enjoy, whilst the potato works as a great ‘thickener’, providing a smooth base to tie everything together and preventing the dish from being too runny.

To Make Smooth ‘N Silky Zucchini, Potato and Apple Puree You Will Need…

1 medium zucchini (courgette), diced
1 small dessert apple, cored and diced
1 medium potato, peeled and diced

Zucchini Potato Apple Puree Baby FoodNote: We chose not to peel the zucchini OR the apple in this recipe in order to maximize their nutritional benefits (remember – most of the important nutrients are in the skin).

As you can see from the main picture, the skins puree very well and are easily manageable.

However, you may prefer to peel these items if your baby is under 6 months of age, or if they are non-organic and you are concerned about pesticide residues (please see this page for more information).

Place the potato dice in a small saucepan and just cover with water. Bring to the boil, reduce the heat and simmer for 5 mins.
Add the diced apple and zucchini and cook for 3 to 5 mins more, until all the ingredients are fork tender.

Transfer to a blender and puree until completely smooth, adding a little breast milk/formula to thin if necessary.

Cool to a safe temperature and serve.

Keep any leftovers in the fridge for up to 48 hours or in the freezer for up to one month.
