We have a nice and easy baby food recipe for you today using two vegetables that complement each other perfectly – and are both packed with health-promoting beta-carotene.
This sweet potato and pumpkin puree is given a little extra ‘zip’ by the addition of nutmeg and chives… who said that baby food has to be boring?
Here’s what you’ll need
1 sweet potato, peeled and diced
8oz (1 cup) fresh pumpkin, diced
1 tbsp natural yogurt
1 tsp fresh chives, well chopped
little pinch of ground nutmeg
Combine the sweet potato and pumpkin cubes in a steamer and steam until tender (8-10 mins).
Place the cooked cubes in a food processor, add the natural yogurt and blend until nice and smooth.
Stir in the chives and nutmeg… then serve!
If you plan to freeze portions for future use, leave out the yogurt during preparation. Once you’re ready to use a portion, thaw it, heat it, then stir in the yogurt – this ensures that the texture of this puree stays perfect!
