Everyone in our house enjoys these, so why not increase the quantities and serve them up to the whole family? You could always separate the mixture before cooking if you want to add extra seasoning or spices for the grown-ups!
This recipe makes around 6 slightly crispy little pancakes.
Here’s what you’ll need…
1 medium sweet potato (approx 6 oz to 7 oz, or 180g)
1.5 oz grated cheese (just under 1/2 cup)
1/2 teaspoon garlic powder (optional)
1 egg yolk
1 tbsp whole wheat flour
little olive oil
To make them…
Peel and coarsely grate the potato, then press with kitchen towel to remove excess moisture (you’d be surprised how much comes out and it makes a big difference to how well it holds together).
In a bowl, thoroughly mix the grated potatoes with the cheese, garlic powder, egg yolk and flour.
Warm the oil in a frying pan/skillet over medium heat.
Drop spoonfuls of the mixture into the hot oil and flatten firmly on top (so they look like mini pancakes).
Fry for a few minutes, then turn carefully with a spatula and fry for a further 2-3 mins, until golden brown.
