Tasty Baked Eggplant Patties for Baby

Eggplant is one of those veggies that doesn’t get used too often as a homemade baby food ingredient – but that’s often because it’s hard to think of what to do with it!

We already have a few tasty eggplant (or aubergine) baby food ideas on our site – see the link at the foot of this post – but today we have a yummy finger food idea for you, which is perfect for babies who are feeding themselves!

These patties are easy to pick up, and their soft texture makes them easy to eat, too.

Egg-free and very tasty, they are a great way to introduce eggplant into your baby’s diet.

To Make Tasty Eggplant Patties For Your Baby You Will Need…

1/2 small eggplant/aubergine
3 tbsp grated Cheddar
3 tbsp dry whole-wheat breadcrumbs
1 tbsp mashed white potato
1 tsp dried parsley
pinch dried oregano
1 tsp green onion (spring onion/scallion), chopped
1 garlic clove, crushed (optional)
little pinch freshly ground black pepper.

1. Preheat the oven to 400 deg F (200 deg C).

2. If the eggplant skin is thin and tender, leave it on. If it is thick, then peel it – it may taste bitter.

3. Dice the eggplant flesh, then steam until tender.

4. In a bowl, mix the eggplant with the cheese, bread crumbs, mashed potato, garlic, herbs, black pepper, and green onion. Mash well. If the mixture seems too dry and dense, add a little milk.

5. Shape into patties, of a size to suit your baby, then place on a greased baking sheet.

6. Drizzle with a little olive oil, then bake for 25 to 30 mins, turning once during the cooking time, until golden.

7. Serve just as they are, or with a tomato sauce (for older babies) or even as a healthy alternative to beef patties served in a bun!

Tip: Save time in the kitchen by making a larger quantity of the mixture in bulk, then freezing BEFORE baking in the oven.
