Sweet potatoes are usually a big hit with babies – and sweet potatoes baked twice are twice as nice!
We like to use organic sweet potatoes for this baby food recipe so we can be sure there are no pesticide residues or wax on the skin (click here for more information about peeling veggies for making baby food.)
For our 11 month old, we cut the cooked potato into manageable pieces and he eats them – skin and all – with his fingers.
If you’re concerned that your baby may have difficulty in consuming the skins, then you can just scoop the cooked potato from the skin and serve it in a bowl with a spoon.
Either way, we’re sure he’ll love it!
To Make Twice Baked Sweet Potato For Your Baby You Will Need
1 medium sweet potato
2 tbsp cooked chicken, finely chopped (optional – the potato will taste great without meat if your baby follows a vegetarian diet)
1 tbsp natural yogurt
1 tsp fresh chives, chopped finely
1 tbsp Cheddar cheese, grated
Preheat the oven to 375 deg F (180 deg C).
Pierce the potato with a fork and bake until tender (around 45 mins).
Cut the potato in half lengthwise, and scoop out the flesh, leaving around 1/4-inch remaining all the way around.
In a bowl, mash the potato with the yogurt and chives, then stir in the chopped chicken.
Spoon the potato mixture back into the shell and top with the grated cheese.
Return to the oven and bake until the cheese is melted and golden.
Cool to a safe serving temperature.
Note: You can use other cooked meat besides chicken – we’ve even used tuna at times as our little one is fish-crazy!
