When we lived in England, creamy and nutritious parsnip purees were among the very first foods that we introduced to our little ones. In fact, parsnips made such excellent baby food dishes that we often used to say it was almost as if they were designed for the job!
On moving to the Bahamas after the birth of our fourth child, we were quite sad to discover that parsnips are much more difficult to find here… and much more expensive! They just seem to be altogether less popular on this side of the water and certainly unusual as a food choice for baby!
But we believe that their limited popularity MUST be due to their limited availability… because parsnips are versatile, easy to cook and absolutely delicious! They make the most wonderful purees and pair up perfectly with all sorts of other veggies and even fruits!
