Mini Vegetable Quiche Recipe – A Fab Finger Food For Baby

Today we have a delicious quiche recipe that both your baby AND you will enjoy!

We love making quiche – and the great thing is that it’s a very versatile food!

It’s wonderful served hot or cold (as a matter of fact, our baby prefers it cold because the quiche is more ‘solid’ and easy for him to pick up with his fingers).

You can also change the ingredients to suit your baby’s preferences – you can use different types of cheese, for example, or use your little one’s favourite veggies in place of the ones we’ve suggested below.

This particular recipe produces a crustless quiche, which makes it VERY easy for tiny diners to manage (even with few or no teeth) and also means it’s incredibly quick and easy to make!

The ingredients below will produce 6 mini crustless quiches.

Note: This recipe is suitable for babies from around 8 months, who are already enjoying finger foods. However, it does contain whole eggs. Egg whites are a common allergen, so you may wish to delay their introduction if there is a family history of food allergy.

To Make Our Mini Vegetable Quiche Recipe for Baby You Will Need…

1/2 small zucchini (courgette), diced
around 4 asparagus spears
4 fl oz (1/2 cup) cottage cheese
4 fl oz (1/2 cup) ricotta cheese
2 small eggs, beaten
3 heaped tbsp diced Cheddar cheese
1 tbsp olive oil
1 small garlic clove, crushed
1/2 tsp dried basil

Preheat the oven to 375 deg F (180 deg C).

Remove the woody stems from the asparagus spears, steam them for a few minutes, then chop them.

Beat the eggs with the cottage cheese, ricotta cheese and the olive oil.

Add the diced zucchini, chopped asparagus, Cheddar cheese, garlic and basil.

Pour into a well-greased muffin tray, ramekins, or use silicone cupcake cases (see below). (Alternatively, use a regular greased pie plate or flan dish then cut to size afterwards).

Bake until the quiche has set and is lightly golden. The time will depend on the size of the quiche(s) but will be somewhere between 30 to 45 mins.

Cool and serve – we use a palette knife to remove the quiche from the dish or tray.

The leftovers freeze very well, so you can save some for a future date!

Made these today! YUM-O. I used zucchini, potato, sweet potato, carrots and sauteed onions and garlic. A very satisfying lunch.

Wow, are these quiches great, or what?!! I just tried the recipe a few days ago and me and my 14-month-old daughter loved them! We've had them both for lunch at home and as a snack when out. I used tomato, courgette and also little cubes of potato (already cooked) to add carbs in order to make them a complete meal and they tasted great! Plus they were much quicker to make than a standard crusty quiche. I'm making more of these tomorrow - thanks for another brilliant recipe!

Eggs are quite an essential component of quiche... you could try tofu, perhaps, although we haven't done so ourselves and can't guarantee the results :) We'd love to hear from anyone who's used a good egg alternative for quiche!

Is there anyway these can be made eggless? Can I substitute the egg with something else?
