Today we have a fruit baby food recipe for you that’s a little unusual… because it contains macaroni!
The concept of using macaroni in sweet dishes isn’t new to us – I actually grew up in England, where my favourite winter dessert was a hot, milky macaroni pudding (similar to a sweet rice pudding).
And, when you think about the simple ingredients that pasta contains, there is no reason that it wouldn’t pair successfully with sweeter foods as well as savoury!
This recipe is ideal for babies feeding themselves – we’ve found pasta to be a big hit with all of our children as a finger food, as it is so easy to pick up and is soft enough to manage without the aid of many teeth!
If you are able to find whole wheat macaroni instead of white, then that will, of course, make the dish far more nutritious.
It’s also worth bearing in mind that this dish will work equally well with other pasta shapes besides macaroni (so if you can only get whole wheat penne, for example, then use that instead!).
To make Baby’s Fruit Salad you will need…
2 oz uncooked macaroni
1/2 ripe banana (use one that’s firm enough to cut into dice)
1/4 cup diced Galia or cantaloupe melon
1/2 ripe, sweet kiwi fruit (diced)
1/4 cup natural yogurt
1 large, ripe strawberry
Cook the macaroni according to the directions on the packaging.
Drain, then rinse thoroughly with very cold water (this stops the macaroni cooking further and prevents it from sticking).
Puree the strawberry with the yogurt.
Combine the diced fruits in a bowl with the cold, cooked macaroni and the strawberry/yogurt mixture.
Toss together, coating all the pieces thoroughly.
Serve chilled!
You can, of course, use different fruits from the ones we’ve listed in this recipe, but we’ve found this combination to be particularly yummy!
