The texture is great – firm enough to easily pick up and hold, but still soft enough for little gums and with the melt-in-the-mouth crunch of crisped rice.
Here’s what you’ll need…
2 oz (1/2 cup) flour
2 oz (1/4 cup) unsalted butter at room temperature
6 oz (1 1/2 cups) Cheddar cheese, grated
2 tsp fresh thyme (chopped) or pinch dried thyme
4 tbsp crisped rice cereal
Preheat the oven to 350 deg F (180 deg C).
Put the flour, cheese, butter and thyme into a food processor and mix at the slowest setting until a dough is formed.
Put the dough into a bowl and carefully fold in the crisped rice cereal.
Divide the mixture into small balls (about 1 tbsp each), roll gently in the hands and place them on an ungreased baking sheet (leaving a few inches between each ball). We get around 16 out of this recipe.
Flatten with the palm of your hand to create circles about 1 1/2 in diameter, then place in the oven.
Bake for 10-15 minutes, until the Cheese Bites are a pale gold colour and firm to the touch.
These can be eaten hot or cold – they can also be frozen, although we recommend freezing the mixture prior to baking it for best results!
