Today’s chicken baby food recipe uses dried plums – otherwise known as prunes – to add sweetness and a welcome boost of extra nutrients to baby’s dinner.
(You can learn more about prunes here).
This is a fairly sophisticated recipe which includes mild spices, onions and garlic, which you might prefer to serve to your baby once he’s already been introduced to more basic meals – that being said, our little man (8 months old) LOVES this dish! If you chop the chicken into nice, small pieces, it offers your little one the opportunity to practise his chewing skills, but the sauce makes it very manageable for him.
To Make Yummy Plummy Chicken For Your Baby You Will Need…
1 boneless, skinless chicken breast
1/2 small onion, chopped
1/2 garlic clove, crushed
pinch turmeric
pinch coriander
pinch cinnamon
3 fl oz (1/3 cup) homemade chicken stock or water
2 tsp tomato puree
3 oz (1/3 cup) dried plums (prunes)
Cut the chicken breast into thin strips.
Heat a little olive oil in a small saucepan and saute the onion and garlic until tender.
Add the spices, stir well and cook gently for a further minute.
Add the chicken strips and cook for 5 minutes, until the chicken is white all over.
Stir in the stock or water and the tomato puree. Cover and cook gently for 15 mins.
Meanwhile, chop the dried plums (prunes) finely. At the end of the 15 minutes, stir the chopped prunes into the chicken mixture.
Cook gently for 5 mins, check that the chicken is completely cooked through, then serve with brown rice.
Why not double up and share this dish with your little one – it’s so tasty that the entire family will enjoy it!
