Once you’ve cooked a batch of these pancakes, let them totally cool down. You can then spread them out on a baking tray and place them in your freezer. Once frozen, you can transfer them all to a food-safe storage bag.

If you don’t have room to get a baking tray into your freezer, layer them with wax paper and place them straight into a freezer bag or suitable container. The wax paper is important if you freeze them this way, otherwise they will stick together.

You can store your frozen pancakes for up to one month.

There are several ways you can reheat them. The easiest is to pop them in the microwave for 10 to 20 seconds or put them in the air-fryer. You can even warm them up in a frying pan again, but you’ll need to use a little oil to stop them from sticking.

To Make Cottage Cheese Pancakes for Baby You Will Need…

1/2 cup low-sodium cottage cheese
1/2 cup oats
2 large eggs
1/4 cup raisins
couple of drops of vanilla extract
pinch of cinnamon
a little vegetable oil for frying

1. Put the raisins in a cup of boiling water and allow to soak for 10 minutes, then drain.

2. Place all the ingredients (including the raisins) into a blender and process until you have a completely smooth batter.

3. Heat the oil in a frying pan and pour in spoonfuls of the mixture to form 6 small or 8 large pancakes.

4. Fry for a couple of minutes on each side until golden, then serve warm.
